THE best caramel popcorn.

My aunt Becky (this girl's momma), she is the gal you call when you need the perfect recipe.  So, logically, when I needed the best caramel popcorn recipe, I called her up.  
Annnnnd I basically can't stop making it.

It's perfect.  And it reaches both types of caramel popcorn people: gooey or crunchy fans.

Becky Rands' caramel popcorn recipe:

  • 2 cups brown sugar
  • 2 cubes butter
  • 1/2 cup corn syrup
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 6 quarts popped popcorn, or one huge bowl of plain popcorn, like to or three microwave bags-ish? I used an air popper.

Boil first four ingredients to a rolling boil, stir constantly for about 4 minutes.
Remove from heat, add vanilla and soda (stir like crazy, the soda makes it grow!)
Pour over popcorn and stir....stir fast to coat it all. (Here's where if you wanted to, add nuts)
Place in greased cookie sheets.
Bake at 250* F for about an hour and about every ten min scrape it and move it around. I actually bake it for about 30 minutes. The longer you cook, the crispier.
Take it out (if adding m&m's or other candy, add now) and dump on your counter (on wax paper) to cool.
