coffee cake

So Chad ran 10 miles before work (not exaggerating), and I made coffee cake.
You can see where our priorities differ.
Its super duper easy, we always have the ingredients, and its very, very tasty. 
Just ask Eden and her dirty little feet.
(the recipe is from THE Betty Crocker book. The same book from when we made donuts. This is my variation of it though:))

what you need:
  • 1 1/2 C flour
  • 3/4 C sugar
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 C shortening
  • 3/4 C milk
  • 1 egg
  • 1 tsp vanilla


Heat oven to 375* F. Grease/spray a pie pan. (or some type of pan similar in size) Mix your dry ingredients together, then stir in the rest, you do not want this to be smooth, like when making muffins and stuff. Lumpy is a good thing. Should be lumpy and thick, spread that goodness in your pan.
Sprinkle topping on top, I like to cut mine into it too, so with a butter knife, swirl it around a little bit.

Topping:
  • 1/3 C brown sugar
  • 1/4 C flour
  • 1 tsp vanilla
  • dash of cloves and nutmeg

Mix this all up (in a separate bowl) with a fork until crumbly.

Bake for about 20 minutes, just check it, when you poke it with a pokey thing and it comes out clean, you are done.

I made this Sunday and my son refused to eat a cake without chocolate or sprinkles. What kid argues about the type of cake they get to have for breakfast?! insanity. Thank you for sharing this recipe I loved it!
