Because I made these sweet potato fries:
I go on kicks a lot, sometimes its burritos, sometimes its Brussels sprouts, and now, its coconut. How can I incorporate it in every meal?
To today, for dinner I made my new favorite thing:
Coconut honey sweet potato fries with sweet chili fry sauce.
You heard me.
Heres how ya do it:
Peel and chop up your sweet potatoes in fry-like shapes (I used two honk'n ones).
Dump them into a big bowl, toss with enough olive oil to coat them all.
Add about 1 tsp coarse sea salt (obviously adjust more/less depending on how many potatoes you use)
Then add fresh minced garlic, I added a LOT but thats just cause I love it.
Then, then you add your glorious shredded coconut. I probably added about 1/4 cup? I don't know, just enough to they were a little coated with the goodness.
Line some cookie sheets with foil, and dump the fries on them so they are just one layer.
Pop'm in the oven at 375*f and check them after about 10 minutes, flip them over a bit, then bake until desired softness/crispyness.
Pile them on a big plate and drizzle with raw honey and a little more salt.
BAM.
For the fry sauce, I simply put one part sweet chili sauce and one part mayo in a bowl and stirred it all up.
OH MY LANTA. We ate them all gone.
Viva la coconut! And viva la sweet chili sauce! aka, nectar from the gods.

oh man do i wish i had some of those right now. it's 8:20am. but i could eat all of them.
